CHICKEN BIRYANI RECIPE :
Ingredients :
Chicken 1, Ginger 2 teaspoons, Garlic paste 1 teaspoon, Coriander paste 1 teaspoon, Cumin 1 teaspoon, Chilli paste half a teaspoon, Green pepper paste 1 teaspoon, Poppy seed paste 2 teaspoons, Onion paste half a cup, Raisins 1 tablespoon, Half a cup of sour curd, 1 cup of onion powder, salt to taste. Mix all Garam masala 1 teaspoon, oil half a cup, ghee half a cup, bay leaves 2/3, rose water 4 tablespoons, crushed pistachio nuts 2 tablespoons, sugar 1 tablespoon, vinegar 4 tablespoons, Half a teaspoon of saffron, 1 kg of Polura rice, 8 cups of water, half a cup of oil, 3/4 of cardamom, half a cup of milk, 6 of potatoes, 2 tablespoons of mawa, 8/10 of black pepper.
Method :
First, cut the chicken into pieces, wash it, rub it with ginger, garlic and a little saffron and salt and keep it in the fridge for 2 hours. Now fry the meat in a pot with oil and ghee. Grind together all the spices except sugar, beresta and nutmeg in that oil. When it is well grated, add sour curd and grate it for 1-2 minutes and then grate the meats. Add the onion paste and 1 tablespoon of sugar to the chicken. Now add 1 cup of water and keep it on low heat for 20 minutes. When it is done, top it with crushed almonds and rose water. Cook the pollau with all the ingredients. When done, mix the meat. Mix saffron in rose water and simmer for half an hour. Drain and serve hot.
